Purée half the strawberries in a blender. Chop the remaining strawberries, reserving four for decoration.
Whip the double cream until stiff peaks form, then fold in the strawberry purée and crushed meringue. Fold in the chopped strawberries and ginger cordial, if using.
Spoon equal amounts of the mixture into four cold wine glasses. Serve garnished with the remaining strawberries and a sprig of mint.

Puré la mitad de las fresas en una licuadora. Pica las fresas restantes, reservando cuatro para la decoración.
Bate la crema doble hasta que se formen picos rígidos, luego dobla el puré de fresa y el merengue triturado. Doble las fresas picadas y el cordial de jengibre, si se usa.
Coloque cantidades iguales de la mezcla en cuatro copas de vino frías. Servir adornado con las fresas restantes y una ramita de menta.
